It is the first premium Japanese wagyu butcher shop in the U.S. to import whole boneless wagyu cattle directly from Japan. It was founded by Jae Kim, owner of the Michelin-recognized Korean barbecue restaurant HYUN on the fringes of K-Town.
THE HYUN Premium Butcher Shop officially opened at the end of July of 2024. The shop is a testament to Japan’s minimalist aesthetic, designed to resemble a luxury atelier that perfectly blends elegance and functionality.
Below the shop, is a 2,000-square-foot space that houses THE HYUN’s state-of-the-art wholesale butchering and packaging operation. Jae, in close collaboration with farmers from various Japanese prefectures, will import cattle that will be butcher and packed on-site for retail, wholesale, or e-commerce.
This ensures that THE HYUN can offer the highest quality products to his clientele at the most approachable price points. THE HYUN Collection for gifting allows customers to handpick their favorite cuts, which are then beautifully wrapped in Bojagi, a traditional Korean gift wrapping, wood box set of three or six prime cuts.
These box sets are wrapped in choice of colorful silk fabrics and embellished with decorative tassels, making a perfect gift for any occasion. Custom designed insulated bag, and linen covered ice packs are also provided with every purchase.
